Known for their commitment to specialty coffee and environmental sustainability, the Boillat family focuses on cultivating exotic varieties and pioneering processing methods to elevate flavour and future proof coffee production.
Black Honey Processing
The Black Honey processing method begins with perfectly ripe cherries. Their skin is removed, but 80% of the sticky, sugary mucilage is intentionally left intact, coating the beans in a rich layer of natural sweetness. These pulped beans then dry slowly over several weeks, allowing the mucilage to ferment and deepen in flavour, imparting a dark, raisin like hue and exceptional complexity before final milling.
San Isidro 48 Hybrid
Developed near the town of San Isidro in Tarrazú, this promising hybrid brings together Villa Sarchi and Timor genetics.
